Care Instructions - A Note from the Butcher
• Store the charcuterie in a releasable bag in your refrigerator, but make sure to pull it out at least 30 minutes before you plan on enjoying it so it can come to room temperature and be extra delicious.
• Slice chorizo and salchichón on a diagonal, ⅛-inch thick to showcase texture and impress your friends!
• The presence of mold is normal in cured sausages, much like aged cheese. No wonder they go together so well!
• Remove the casing before eating, but only from the bit you plan on eating! Keeping the charcuterie wrapped keeps it fresh. It's even better if you can cover the cut side of the charcuterie with the wrapping you cut off
