Often described as Chorizo butter, this peppery Mallorcan delicacy has a tangy acidity resulting from fermentation.
It is best served Cúrate style with a smear of goat cheese and a drizzle of honey on a warm baguette, but you can incorporate this delicacy into various recipes. Use it in place of nduja, add it to an omelet for added flavor, or—call us crazy—spread it on a bun the next time you make a burger at home as an additional flavor accent!

Care Instructions - A Note from the Butcher
• Store the charcuterie in a releasable bag in your refrigerator. Make sure to pull it out at least 30 minutes before you enjoy it so it can come to room temperature and be extra delicious.
• Slice chorizo and salchichón on a diagonal, ⅛-inch thick, to showcase texture and impress your friends!
• The presence of mold is regular in cured sausages, much like aged cheese. No wonder they go together so well!
• Remove the casing before eating, but only from the bit you plan on eating! Keeping the charcuterie wrapped keeps it fresh. It's even better if you can cover the cut side of the charcuterie with the wrapping you cut off
